Chicken Jambalaya - cooking recipe

Ingredients
    1 (3 lb.) fryer, skinned and cut up
    1/4 c. flour
    2 tsp. salt (optional)
    1/4 c. vegetable oil
    2/3 c. raw long grain rice
    2 cloves garlic
    1 medium onion, chopped
    1 large can tomatoes
    2 tsp. chili powder
    red and black pepper to taste
Preparation
    Coat cut up chicken by placing pieces, a few at a time, in a paper bag with flour and desired salt (if any).
    Shake.
    Brown chicken lightly in oil, then place chicken in large casserole with a tight fitting cover.
    Brown rice, garlic and onion in pan in which chicken was browned.
    Add tomatoes, chili powder, 1/2 teaspoon salt and pepper; simmer for 5 minutes.
    Pour over chicken.
    Cover and bake in a 350\u00b0 oven for 1 hour and 15 minutes. Check occasionally and add water if dry.
    One serving is 1/6 recipe with 1/2 cup rice.
