Asian Chicken Salad(Makes 1 Serving) - cooking recipe

Ingredients
    1 Tbsp. soy sauce
    1 tsp. lemon juice
    1/2 tsp. dark Asian sesame oil
    1 small glove garlic, finely chopped
    1/2 tsp. finely minced fresh ginger
    1 sweet red pepper
    1 (3 oz.) boneless, skinned chicken breast
    1 c. cooked cellophane noodles (1 1/2 oz. dry)
Preparation
    Preheat broiler.
    Combine soy sauce, lemon juice, sesame oil, garlic and ginger in a small bowl.
    Place red pepper and chicken on broiler pan 3-inches from heat.
    Broil chicken 3 minutes per side, until opaque.
    (May want to put an extra chicken breast on the barbecue and use leftovers.)
