Potato Soup With Sausage - cooking recipe

Ingredients
    2 Tbsp. margarine or butter
    1 medium onion, chopped
    1 medium apple, chopped
    2 c. shredded cabbage
    4 c. chicken broth
    3 (6 oz.) Idaho potatoes, cut into 1-inch pieces
    2 medium carrots, thinly sliced
    1 tsp. dried thyme
    salt and pepper to taste
    1/2 lb. Polish sausage
    1 medium zucchini, thinly sliced
Preparation
    In a large saucepan or Dutch oven, melt margarine over medium heat.
    Add onion and apple and cook 5 minutes.
    Add cabbage; cook 5 minutes longer.
    Stir in chicken broth, potatoes, carrots and seasonings.
    Cover; cook over low heat 20 minutes.
    Add thinly sliced sausage and zucchini.
    Cook 5 minutes longer or until potatoes and vegetables are tender.
    This recipe makes 10 cups.
