Cafe International'S Chicken Sicilian - cooking recipe

Ingredients
    8 oz. boneless, skinless chicken breasts, cut into strips
    1/4 to 1/2 tsp. fresh minced garlic
    pinch to 1/4 tsp. dried basil
    pinch to 1/4 tsp. dried oregano
    4 mild cherry peppers, tops removed and halved
    3 large fresh mushrooms, sliced
    1 small peeled, boiled potato, cut in pieces
    1 Tbsp. sliced green olives
    1 Tbsp. sliced black olives
    2 slices fresh tomato, diced
    salt and pepper to taste
Preparation
    Dredge chicken strips in flour.
    Fry in deep fryer.
    Drain. Saute the garlic in heated olive oil until it softens.
    Add chicken, mushrooms, peppers, potato and seasonings.
    Heat until warm.
    Add brine from the cherry peppers jar, about 2 teaspoons. Add tomatoes and olives.
    Heat until warm.
    Serves 1.
