Potato Skins - cooking recipe
Ingredients

4 medium-large potatoes
4 Tbsp. melted butter
1/2 c. grated Cheddar cheese
1/2 c. sour cream
bacon bits
Preparation

Scrub and prick potatoes.
Rub with oil.
Bake 1 hour at 400\u00b0 or until a fork comes out clean.
Let the potatoes cool.
Cut potatoes in 1/2 lengthwise and then slice in 1/2 again.
Scoop out inside of potato, leaving a shell about 1/4-inch thick (make sure they are not too thin).
Melt butter and brush onto sides of the potato skins.
Arrange skins on an ungreased cookie sheet and bake at 500\u00b0 for 12 minutes or until crisp.
Remove carefully from oven with oven mitts and sprinkle with cheese and bacon bits.
Return to oven for 2 to 3 minutes or until cheese melts.
Serve with sour cream.
