Candied Grapefruit Peel - cooking recipe

Ingredients
    peel from 3 medium grapefruit
    water
    2 c. sugar
    1 c. water
    tinted sugar
Preparation
    Grapefruit directions:
    Cut peel from grapefruit; cut peel into strips.
    Add cold water to cover strips of peel.
    Cover and bring to boil; boil 5 minutes.
    Drain and repeat 3 times (this removes bitterness).
    Add sugar and 1 cup water to drained peel.
    Bring to boil and boil gently over low heat until syrup is thick and almost absorbed by peels, stirring occasionally.
    Drain on absorbent paper.
    Roll in tinted sugar while still hot so sugar will stick to peels.
