Pork Medallions With Brandy Cream - cooking recipe

Ingredients
    1/2 to 2 1/2 lb. boneless pork loin
    1/3 c. chicken broth
    1/4 c. whipping cream
    1 Tbsp. lemon juice
    12 (3-inch) chives
    pepper
    1 Tbsp. chopped shallots or green onion
    1/4 c. brandy or cognac
    1/4 tsp. salt
    1/8 tsp. white pepper
    1/2 c. unsalted butter, cut into strips
Preparation
    Rub pork roast with pepper.
    Place on rack in shallow baking pan.
    Roast at 325\u00b0 until meat thermometer registers 160\u00b0.
    In saucepan, combine chicken broth and green onion.
    Bring to boil, reduce, cover and simmer 2 minutes.
    Add whipping cream and brandy.
    Simmer uncovered 10 minutes.
