Zucchini Fritters - cooking recipe

Ingredients
    1 lb. zucchini, unpeeled and grated
    1 tsp. chives, finely chopped
    1 tsp. parsley, finely chopped
    1 c. buttermilk pancake mix
    1/4 tsp. salt
    1/4 tsp. pepper
    1 egg, beaten
    1/2 c. salad oil
Preparation
    Combine all ingredients but the oil.
    Heat oil to 375\u00b0 and drop batter by tablespoons into oil. Turn once.
    Cook until golden.
    Drain on paper towels.
    Batter may be deep fried.
