Chicken Stir-Fry - cooking recipe

Ingredients
    1 to 1 1/2 c. cubed boneless chicken breast
    3/4 c. broccoli flowerets
    3/4 c. carrots, sliced
    1 small can sliced water chestnuts
    1/2 c. soy sauce
    4 Tbsp. vegetable oil, separated
    1/3 c. sliced almonds (optional)
Preparation
    In large skillet, heat 2 tablespoons oil.
    Add chicken and half of soy sauce.
    Cook until chicken is done, about 5 or 6 minutes; set aside.
    In another large skillet, heat remaining oil.
    Add vegetables, almonds and remaining soy sauce.
    Cook about 7 to 10 minutes.
    Add chicken during last few minutes to reheat. Serve with rice.
    Makes 4 to 5 servings.
