Zucchini Relish - cooking recipe
Ingredients

20 c. ground or chopped zucchini
8 c. chopped onion
10 Tbsp. plain salt
4 1/2 c. vinegar
10 1/2 c. sugar
2 tsp. dry mustard
4 tsp. celery seed
1/2 tsp. black pepper
2 tsp. turmeric
2 tsp. cornstarch
2 tsp. nutmeg
Preparation
-
Mix zucchini with onion and salt.
Let stand overnight; drain and rinse 3 times.
Then add vinegar, sugar, mustard, celery seed, black pepper, turmeric, cornstarch and nutmeg.
Cook slow until clear or about 45 minutes.
