Crispy Chicken Rolls - cooking recipe
Ingredients

6 chicken breast halves, skinned and boned
1 1/4 c. chopped, cooked shrimp
3/4 c. butter, softened
1/4 c. chopped onion
3/4 tsp. salt
1 c. all-purpose flour
1 1/4 tsp. baking powder
1/2 tsp. salt
3/4 c. water
additional all-purpose flour
vegetable oil
Preparation

Place each chicken breast on a sheet of wax paper.
Flatten chicken to 1/4-inch thickness, using a mallet or rolling pin. Combine shrimp, butter, onion and 3/4 teaspoon salt; spoon 1/4 cup mixture in center of each chicken breast.
Roll up lengthwise, and secure with a wooden pick.
Cover and refrigerate 15 minutes. Combine 1 cup flour, baking powder, salt and water.
Dredge each chicken roll in flour, and coat with batter.
Fry in 1 inch hot oil (375\u00b0) in a large skillet about 15 minutes or until golden brown.
Drain thoroughly on paper towels.
Serve immediately. Yields 6 servings.
