Tofu-Sweet Potato Pie - cooking recipe

Ingredients
    1 unbaked pie crust (preferably whole wheat)
    1 lb. soft tofu
    1 (24 oz.) can sweet potatoes
    1 1/2 tsp. cinnamon
    3/4 tsp. ginger
    1/2 tsp. nutmeg
    1 tsp. salt
    4 Tbsp. oil
    1 tsp. vanilla
    1 c. light brown sugar
Preparation
    Blend all ingredients in a blender or food processor until thoroughly blended and free of lumps.
    Pour into pie crust and bake at 350\u00b0 for 40 minutes.
