Lentil And Vegetable Soup - cooking recipe

Ingredients
    2 Tbsp. olive oil, divided
    2/3 c. diced white onion
    2/3 c. diced carrot
    2 medium potatoes, diced or chunked
    2 garlic cloves, minced
    6-8 c. beef broth
    1 1/2 c. dry lentils
    1 bay leaf
    salt, to taste
    pepper, to taste
Preparation
    Heat 1 tablespoon olive oil in skillet and saute onion and garlic until tender.
    Set aside. In a large pot, add beef broth, oil, lentils, carrots, potatoes, onions, garlic, bay leaf, salt and pepper.
    Bring to a boil and allow to simmer uncovered about 30 minutes or until lentils and vegetables are cooked thoroughly. If the broth starts to evaporate, add water until soup is the desired consistency.
