Eggplant Parmesan - cooking recipe
Ingredients

1 eggplant, sliced into 1/2-inch rounds
2 eggs, slightly beaten
1 1/2 c. cornmeal
1/4 tsp. salt
2 c. Mozzarella cheese, grated
1 large jar favorite spaghetti sauce
olive oil
1/4 c. Parmesan cheese, grated
Preparation

Dip eggplant rounds into egg, then cornmeal.
Fry in olive oil in large skillet.
Drain on paper towels.
