Chicken Vegetable Gumbo(Low-Fat) - cooking recipe

Ingredients
    1/4 c. olive oil
    2/3 lb. frozen okra
    1 c. onion, chopped
    1/2 c. celery
    1 c. mushrooms, sliced
    1/2 c. bell pepper, chopped
    2 garlic cloves, minced
    2 (14 oz.) c. whole tomatoes
    1 (10 1/2 oz.) c. chicken broth
    1 tsp. dry Italian seasoning
    1 tsp. gumbo file
    1/4 tsp. salt
    1/2 tsp. pepper
    2 c. chicken, cooked and cubed
Preparation
    In large pot with lid, heat olive oil.
    Add onion, celery, bell pepper and garlic.
    With lid on, sweat the vegetables about 5 minutes.
    Add okra, mushrooms, tomatoes and chicken broth.
    Cover and cook about 30 minutes.
    Then add chicken and cook until chicken is heated.
