Minestrone Beef Soup - cooking recipe
Ingredients

1 lb. ground beef
1 c. diced onion
1 c. cubed raw potatoes
1 c. sliced carrots
1/2 c. shredded cabbage
1 (No. 2) can tomatoes or 1 qt.
1/4 c. rice
1 small bay leaf, crushed
1/2 tsp. thyme
1 leaf basil
4 tsp. salt
1/8 tsp. pepper
1 1/2 qt. water
shredded cheese (optional)
Preparation
-
Brown ground beef and onion in large pan.
Add the next 5 ingredients; bring to a boil.
Sprinkle rice into the mixture. Add remaining ingredients.
Cover and simmer for 1 hour.
Serve as a main dish topped with shredded cheese.
Serves 6 to 8.
