Potato Soup - cooking recipe

Ingredients
    1/2 lb. butter
    1 1/4 lb. diced onions
    1 c. flour
    1 qt. half and half
    4 lb. diced potatoes, peeled and cooked, do not overcook
    1 tsp. salt
    1 tsp. basil
    1/2 tsp. black pepper
    1/2 tsp. Tabasco
    1/2 gal. chicken stock
Preparation
    Melt butter.
    Prepare chicken stock.
    Saute onions in butter until translucent.
    Add flour; mix thoroughly.
    Cook over low heat for 5 minutes.
    Slowly add hot chicken stock, stirring until smooth.
    Add half and half and remaining spices.
    Simmer 10 minutes.
    Add potatoes; stir.
    Simmer 10 minutes.
    Garnish with Cheddar cheese, bacon bits and chives.
