Potato, Carrot And Onion Roast - cooking recipe

Ingredients
    1 1/2 lb. small red potatoes, halved
    4 carrots, sliced diagonally
    1 large onion, cut into wedges
    2 Tbsp. oil (preferably olive oil)
    1/2 tsp. salt
    1/2 tsp. cracked black pepper
Preparation
    Preheat oven to 425\u00b0.
    In large bowl, combine potatoes, carrots, onion, oil, salt and pepper.
    Toss to coat.
    Transfer potato mixture to roasting pan.
    Bake until potatoes are tender, about 30 minutes.
    Makes 4 servings.
