Lemon Meringue Cake With Strawberries - cooking recipe

Ingredients
    2 c. sliced strawberries
    1/4 c. sugar
    1 1/4 c. all-purpose flour
    1 c. sugar
    1/4 c. margarine, softened
    1/2 c. skim milk
    1 1/2 tsp. baking powder
    1 1/2 tsp. grated lemon peel
    1 tsp. vanilla
    1/4 tsp. salt
    2 egg whites or 1/4 c. egg substitute
    2 egg whites
    1/2 c. sugar
Preparation
    Mix strawberries and 1/4 cup sugar.
    Cover and refrigerate until serving time.
    Heat oven to 350\u00b0.
    Spray a 9 x 9 x 2-inch square pan with nonstick cooking spray.
    Beat flour, 1 cup of sugar, the margarine, milk, baking powder, lemon peel, salt and 2 egg whites or egg substitute in large bowl on low speed for 30 seconds, scraping bowl constantly.
    Beat on high speed 2 minutes, scraping bowl occasionally.
    Pour into pan and bake for 25 to 30 minutes, or until inserted toothpick comes out clean.
    Remove from oven.
