Chicken Broccoli Muffins - cooking recipe
Ingredients

1/2 boneless, skinless chicken breast
1/2 c. chopped broccoli stems
1/2 c. grated Swiss cheese
1/4 c. chopped onion
1 Tbsp. chopped fresh parsley
3/4 c. evaporated milk
2 eggs
salt and pepper
Preparation

Poach chicken in just enough water to cover, about 15 minutes or until cooked through.
Preheat oven to 400\u00b0.
Coat 6 cups of a standard muffin tin with nonstick baking spray.
Put all ingredients in food processor and process until pureed.
Spoon an equal amount of chicken mixture into each cup.
Bake 40 minutes or until firm to touch.
Unmold and serve when cool enough to eat or refrigerate and serve cold.
