Roast Beef With Bearnaise Cream - cooking recipe

Ingredients
    1/4 c. dry white wine
    2 Tbsp. tarragon vinegar
    1 tsp. tarragon
    2 Tbsp. chopped shallots
    yellow food coloring (optional)
    8 oz. cream cheese
    4 Tbsp. butter
    1/2 tsp. lemon juice
    1/4 tsp. pepper
    few drops Tabasco
Preparation
    In processor, blend cream cheese with butter.
    Add reduced mixture, lemon juice, pepper and a few drops Tabasco.
    Blend, then taste to correct seasonings and consistency.
    Chill.
    Spread on slices of medium rare roast beef, roll, then chill until firm. Cut into 1-inch pieces before serving.
