Sour Cream Stuffed Potatoes - cooking recipe

Ingredients
    4 large Irish potatoes
    1 (8 oz.) pkg. sour cream
    1 stick butter
    1/2 c. chopped green onion
    1/3 c. Cheddar cheese, grated
    2 eggs
    1/2 tsp. salt
    1/2 tsp. red pepper
Preparation
    Bake potatoes until they are soft in the middle.
    Remove them from the oven and cool 5 minutes.
    Cut them into halves and scoop out the centers.
    In a mixer, blend all of the above ingredients while slowly adding hot potatoes.
    With a large spoon, fill the potato shells.
    Bake the stuffed potatoes for 20 minutes in a hot oven (400\u00b0).
    Serve piping hot.
