Chicken Stuffed With Rice - cooking recipe

2 small frying chickens
2 tsp. salt
2 large onions, thinly sliced
4 cloves crushed garlic
1/4 c. butter
1/2 c. rice
1/4 c. dried barberries*
1/4 tsp. black pepper
1 c. chicken stock
2 Tbsp. slivered almonds
2 Tbsp. raisins
2 Tbsp. fresh lime juice
1/4 tsp. ground saffron
1/2 c. butter, melted
lime slices (for garnish, optional)
Preparation

Rub chicken with 1 teaspoon of salt.
Brown onions and garlic in skillet in 1/4 cup butter.
Add rice, remaining salt and pepper. Cook 5 minutes, stirring occasionally.
Add chicken stock.
Cover and simmer over low heat for 20 minutes.
