Chunky Pizza Soup - cooking recipe

Ingredients
    1/2 c. sliced mushrooms
    1/4 c. chopped green pepper
    1 small onion, chopped
    1 clove garlic, minced
    1 Tbsp. oil
    1 (28 oz.) crushed tomatoes
    1 c. sliced pepperoni
    1/2 c. beef stock
    1/2 tsp. basil
    salt and pepper
    1 c. Mozzarella cheese, shredded
Preparation
    Saute first 4 ingredients in oil.
    Add tomatoes, pepperoni, beef stock and basil.
    Heat through for 20 to 30 minutes on a low simmer.
    When ready to serve, ladle into bowls, sprinkle with 1/4 cup shredded cheese and heat in microwave until cheese melts.
