Zucchini Casserole - cooking recipe
Ingredients

1 or 2 medium zucchini
1 medium onion
1 1/2 tsp. oregano
3 fresh tomatoes, peeled and chopped
1 small can mushrooms
1 small can tomato sauce
1/4 c. grated Parmesan cheese
Preparation

Saute zucchini, onion, oregano, tomatoes and mushrooms, if desired.
Cook until tender, uncovered.
There should be plenty of liquid from the vegetables.
Add tomato sauce and Parmesan cheese. Pour into greased casserole and bake at 350\u00b0 for 30 minutes.
Last 5 minutes sprinkle with Parmesan cheese.
