Ingredients

1 c. mashed potatoes
1 c. water (warm)
1 c. shortening, melted
1/4 c. sugar
1 Tbsp. yeast
2 eggs, beaten
1 tsp. salt
6 c. flour
2 c. water (warm)
3/4 c. sugar
Preparation

In small bowl, put 1 cup water, sugar and yeast.
Set aside to dissolve, then in large bowl, put 2 cups water, 3/4 cup sugar, shortening, eggs and salt.
Mash potatoes and dissolved yeast water, then stir in flour.
Knead about 5 minutes.
Put in large bowl and let rise 1 hour.
Roll out dough and cut doughnut out. Let rise about 1 hour or so, then cook in hot oil until golden brown.
