Chicken Tetrazzini - cooking recipe

1 1/2 lb. chicken cutlets
1 lb. mushrooms
4 Tbsp. butter
olive oil (for sauteing)
3 Tbsp. butter
3 Tbsp. flour
1 3/4 c. heavy cream
1/3 c. dry sherry
1/2 c. grated Gruyere cheese
garlic, chopped
sun-dried tomatoes
1 lb. angel hair pasta
Preparation

Dust chicken with flour, salt and pepper. Saute garlic and mushrooms with 4 tablespoons butter, then add dusted chicken and 3 more tablespoons butter and 2 tablespoons olive oil.
Cook until brown on both sides. Remove chicken and mushrooms.
Blend flour into remaining butter and oil.
Add sherry, cream and cheese. Once cheese is melted, add your cooked chicken and sun-dried tomatoes. Cook low for about 25 minutes. Serve over cooked pasta.
