Ingredients

1 1/2 c. sugar
3 eggs
1 Tbsp. cornmeal
1 Tbsp. flour
1 tsp. vanilla
1/2 stick butter
juice of 1/2 lemon or 1 Tbsp. vinegar
1 c. Angel Flake coconut, toasted
Preparation

Mix all ingredients into mixing bowl except coconut.
Beat 1 to 2 minutes.
Add toasted coconut; fold in well.
Pour mixture into 9-inch pie crust.
Place on cookie sheet to bake.
Bake 1 hour at 325\u00b0.
