Peanut Butter Pinwheels - cooking recipe

Ingredients
    1/2 c. cold, mashed potatoes
    5 to 6 c. sugar
    1 tsp. vanilla flavoring
    3/4 c. smooth peanut butter
Preparation
    Combine potatoes with enough sifted confectioners sugar to make fontant the consistency of pie dough.
    Add vanilla.
    Chill.
    Roll out to 1/4-inch thickness between 2 pieces of waxed paper.
    Spread with peanut butter.
    Roll up from short side jelly roll fashion. Chill until firm.
    Cut into 1/4-inch slices.
    Keep in a cool place.
