Brown Rice Milanese - cooking recipe

2 Tbsp. Butter
2 Shallots, chopped
1 clove Garlic, minced
3 Tbsp. Dried chives
1/2 tsp. Dried dillweed
1 c. Short grain brown rice
2 c. Cold water
1 c. Romano cheese, finely grated
Preparation

Melt the butter in a large skillet or shallow heat proof casserole over a medium heat. Add shallots and garlic, saute until tender. Add chives and dill, saute for 2 minutes. Stir in rice and saute until it begins to boil.
Reduce heat to low, cover and simmer for 45 minutes. Do not remove cover during cooking time. Remove from heat and add cheese and toss lightly until melted. Rice can be cooked ahead to point of adding cheese. Heat through before adding cheese.
