Ndiwoaza Mandanda(Egg Dish) - cooking recipe

Ingredients
    3/4 c. peanut oil
    6 medium ripe tomatoes, cubed
    4 medium onions, chopped
    6 hard-cooked eggs, shelled and pierced all over with toothpick
    1 Tbsp. curry powder
    1 tsp. salt
    1/4 tsp. cayenne pepper or chili powder
    1/2 c. boiling water
    hot cooked rice
Preparation
    Heat oil in deep frying pan.
    Add tomatoes and onions.
    Mix well.
    Add curry powder, salt and cayenne.
    Immerse the eggs in mixture.
    Add boiling water.
    Cover.
    Cook slowly for 12 minutes. Serve on rice.
