Cheng Du Chicken(Serves 4) - cooking recipe

Ingredients
    1 Tbsp. sherry
    2 Tbsp. soy sauce
    1/2 tsp. pepper
    2 Tbsp. cornstarch
    1 lb. chicken boneless breast, cut in chunks
    2 Tbsp. cooking oil
    1 green pepper, cut into chunks
    4 cloves garlic, chopped
    1/2 clove ginger (fresh), grated
    1 onion, chopped (optional)
    snow peas or broccoli (optional)
    1 Tbsp. dry red pepper flakes
    1 Tbsp. vinegar
    1 Tbsp. soy sauce
    2 tsp. sesame seed oil
    1/2 c. peanuts (optional)
Preparation
    Mix sherry, 2 tablespoons soy sauce, pepper and cornstarch. Add chicken and refrigerate 15 minutes or longer to marinate.
    In wok or skillet, heat cooking oil.
    Saute green pepper, garlic, ginger, onion, snow peas and broccoli.
    Then add the chicken mixture until chicken is white through.
    Add red pepper flakes, vinegar, 1 tablespoon soy sauce, sesame seed oil and peanuts. Cook 3 minutes and serve over rice.
