Mexican Lasagna - cooking recipe

Ingredients
    1 lb. ground white meat skinless turkey
    1/2 c. chopped celery
    1/2 c. chopped onion
    1/4 c. chopped green peppers
    1 (14 oz.) can tomatoes
    1 (10 oz.) can enchilada sauce
    1/8 tsp. lite salt
    1 c. grated non-fat Cheddar cheese
    1 c. non-fat cottage cheese
    1 Egg Beater (1/4 c.)
    1/2 c. fat-free chicken broth
    8 corn tortillas
    1/2 c. grated non-fat Cheddar cheese
Preparation
    Cook turkey meat in a bowl in the microwave about 5 minutes. Cover with wax paper, check and stir.
    Drain well.
    Combine next 3 ingredients and saute over medium heat in chicken broth.
    Add cooked turkey after vegetables are cooked.
    Add next 3 ingredients and stir well.
    Bring to a boil and reduce heat.
    Simmer 10 to 15 minutes.
