Balsamic Chicken - cooking recipe
Ingredients

1/3 c. olive oil divided
1 garlic clove pressed
1 Tbsp. oregano
1/3 c. Balsamic vinegar
1 onion coarsely chopped
salt and pepper to taste
1 c. black olives sliced
1 6 oz. Vermicelli or Angel Hair pasta (cooked per pkg. directions set aside)
4 boneless skinned chicken breast
Preparation

Heat 2 Tbsp. olive oil in skillet.
Add chicken and cook 10 minutes.
Reduce heat to low.
Add garlic, oregano, salt and pepper.
Turn chicken.
Add Balsamic vinegar and remaining olive oil.
Bring to simmer.
Cover and cook over low heat until chicken is done, about 15 minutes.\tAdd black olives and heat until warm. Serve separately or on top of pasta.
Serves 4.
