Eggplant Dressing - cooking recipe

Ingredients
    1 lb. lean ground chuck
    1 large eggplant, peeled and cubed
    1 small bell pepper, chopped
    1 medium onion, chopped
    2 ribs celery, chopped
    2 c. long grain rice
    salt, black pepper and red pepper (optional) to taste
Preparation
    Cook
    rice according to directions.
    Brown ground meat. Add bell pepper, celery and onion and saute.
    Season to taste. Lower heat,
    cover
    and
    cook
    vegetables
    until tender.
    Add eggplant. Cover
    and cook until tender and flavors are blended.
    Add
    1/2 cup
    water
    and adjust seasoning.
    Simmer a few more
    minutes. Remove
    from
    heat.
    Gradually
    add hot cooked rice
    until
    right consistency, not too moist and not too dry. (May have
    some rice left over.) Can be made ahead and reheated.
