Zucchini Bread - cooking recipe

Ingredients
    3 slightly beaten eggs
    2 c. unpeeled, shredded zucchini
    2 c. sugar
    1 c. oil
    3 tsp. vanilla
    3 c. flour
    1 tsp. soda
    1 tsp. salt
    1/4 tsp. baking powder
    3 tsp. cinnamon
    1 c. nuts (I use walnuts)
    1 c. coconut
Preparation
    Mix together eggs, zucchini, sugar, oil and vanilla; set aside.
    Mix together flour, soda, salt, baking powder, cinnamon, nuts and coconut.
    Blend with egg mixture and bake 1 hour at 350\u00b0. Makes 2 loaves or 1 loaf and 3 little loaves.
    Bake the 3 little loaves for around 45 to 50 minutes.
    Makes about 6 dozen muffins.
    Bake them for 15 minutes.
