Cornish Hen With Parsley Sauce - cooking recipe

Ingredients
    3 Cornish hens, split in half
    4 Tbsp. flour
    4 tsp. salt
    1 tsp. pepper
    6 Tbsp. butter
    generous pinch of dried marjoram
    pinch of dried thyme
    pinch of dried sage
    3/4 tsp. chili powder
    3/4 tsp. paprika
    2 Tbsp. sherry or 1/4 c. white table wine
    1 c. parsley, chopped
Preparation
    Wash and dry chicken thoroughly.
    Combine flour, salt and pepper in a paper bag.
    Shake chicken pieces in flour mixture to coat evenly.
    Melt butter in a heavy skillet with cover or a Dutch oven.
    Stir in marjoram, thyme, sage, chili powder and paprika. When butter is bubbly, add chicken pieces, a few at a time, brown evenly on all sides.
