Ingredients

1 qt. carrots
2 Tbsp. sugar
1 tsp. flour
1/4 c. water
2 egg yolks
1 tsp. salt
1 tsp. dry mustard
1/3 c. vinegar
4 slices bacon, fried and crumbled
4 Tbsp. bacon fat
Preparation

Clean and slice carrots.
Cook in pan of boiling water until tender, then place in a serving dish.
In a separate saucepan, blend sugar, flour, bacon, fat, vinegar and water; cook 2 minutes. Remove from heat and add slightly beaten egg yolks.
Mix well. Pour over hot cooked carrots and serve.
Serves 6 to 8.
