Mashed Sweet Potato Bake - cooking recipe

Ingredients

6 medium sweet potatoes
1/2 tsp. grated orange peel
2 Tbsp. orange juice
2 Tbsp. brown sugar
2 Tbsp. butter or margarine
1/2 tsp. salt
1/2 tsp. ground cinnamon
1 egg
1/2 c. milk

Preparation

Cook peeled sweet potatoes in boiling water until done.
Drain and cut up; mash with electric mixer.
Add orange peel, orange juice, brown sugar, butter, salt and cinnamon.
Add egg and milk; beat until fluffy.
Bake at 350\u00b0 in a greased 1-quart casserole covered for 45 to 50 minutes.
Serves 6 to 8.
