Parmesan Potato Casserole - cooking recipe
Ingredients

12 medium-size red potatoes, peeled or unpeeled
1/2 c. butter or margarine
1 c. milk
3 large eggs, lightly beaten
1/2 c. grated Parmesan cheese
1/4 c. chopped parsley
1 tsp. salt
1/2 tsp. pepper
Preparation

Heat oven to 350\u00b0.
Lightly grease a shallow 3-quart baking dish.
Cook potatoes in water, covered, 15 to 20 minutes until tender.
Drain well and return to pot.
Add butter to potatoes and mash until butter melts.
Add milk, eggs, cheese, parsley, salt and pepper and mash until smooth (some small lumps may remain). Spoon into prepared dish.
May be made ahead to this point and refrigerated.
Bring to room temperature before baking.
Bake covered 45 to 50 minutes until puffed and golden.
Makes 12 servings.
