Texas Pecan Cake - cooking recipe
Ingredients

3 c. sugar
1 lb. butter
7 eggs, separated
1 1/2 lb. candied fruit
5 c. all-purpose flour
2 oz. bottle lemon extract
1 tsp. baking soda
1 qt. pecans
Preparation

Cream sugar and butter and add well beaten egg yolks.
Add 1 1/2 cups of flour, soda and lemon extract.
Beat well.
Add 2 cups flour.
Beat well.
Add 1/2 cup flour to candied fruit (I use red and green cherries) and pecans.
Coat well.
Mix into cake batter. Beat egg whites until they peak.
Fold into cake.
At this point it is better to use your hands.
