Sweet Onion Casserole - cooking recipe

Ingredients
    6 c. chopped Vidalia sweet onions
    1/4 c. chopped bell pepper (optional)
    4 Tbsp. cooking oil or margarine
    3 c. grated Cheddar cheese
    1 1/2 c. heavy cream
    1 egg plus 2 yolks
    1 Tbsp. chopped pimento (optional)
    1 tsp. seasoned salt
    paprika as garnish
Preparation
    Preheat oven to 400\u00b0.
    Saute onions and bell pepper in cooking oil for 15 minutes on medium-low heat.
    Place half of grated cheese in 2-quart casserole dish.
    Top with saute and pepper.
    Add remaining cheese on top of onions and pepper.
    Combine heavy cream (unwhipped), eggs, pimento and salt to make a sauce.
    Pour sauce over cheese and onions.
    Sprinkle paprika as a garnish.
    Bake in 400\u00b0 oven for 10 minutes, lower heat to 325\u00b0 and bake 25 minutes. Makes 8 servings.
