Mom'S Rice Pilaf - cooking recipe

Ingredients
    1/2 to 1 c. cubed meat and/or poultry
    1/2 to 2 c. sliced or diced celery and/or other vegetables (mushrooms, etc.)
    1/2 to 3/4 c. chopped onion
    1 clove garlic, minced
    1 c. raw brown rice
    2 to 4 Tbsp. olive oil
    2 1/2 to 3 c. liquid *
    1/2 to 1 tsp. curry powder (and/or cumin)
    1/4 c. almonds (optional)
    1/2 c. raisins (optional)
    1/2 c. grated Cheddar cheese (optional)
Preparation
    *Stock, broth or water with 1 tablespoon tamari soy sauce or combination of water with cooking wine.
