Quick Potato Casserole - cooking recipe

Ingredients
    1 large onion, chopped
    1 bell pepper, chopped
    1 lb. grated Velveeta cheese
    1 pt. sour cream
    1 can cream of chicken or mushroom soup
    1 (2 oz.) pkg. frozen hash brown potatoes
    salt and pepper to taste
Preparation
    Mix all ingredients with thawed potatoes in a large Pyrex baking dish that has been sprayed with Pam.
    Bake for 1 to 1 1/2 hours at 325\u00b0.
    Stir every 30 minutes.
    Serves 12.
