Sweet-Sour Ham Rice Skillet - cooking recipe

Ingredients
    2 c. cubed cooked ham
    1/2 c. chopped onion
    1/2 c. chopped green pepper
    2 Tbsp. butter or oleo
    1 (20 oz.) can pineapple chunks
    1 c. uncooked rice
    1/4 c. brown sugar, packed
    2 Tbsp. vinegar
    1 tsp. salt
Preparation
    Cook ham, onion and green pepper in butter until onion is tender.
    Drain pineapple; reserve liquid.
    Add enough water to pineapple juice to make 2 1/2 cups.
    Add liquid, rice, pineapple, brown sugar, vinegar and salt to ham; stir.
    Bring to a boil; reduce heat and simmer, covered, until liquid is absorbed, about 25 minutes.
    Makes 6 servings.
