Pasta All'Erbie(Italian - Area Of Toscany) - cooking recipe
Ingredients

pasta (tagliatelle)
basil (fresh)
coriander (fresh, optional)
garlic (fresh, lots)
1 grated carrot
1 stick celery
salt and pepper
tin of peeled tomatoes
1 small chili (no seeds)
1/2 Tbsp. olive oil
Mozzarella cheese (optional)
Preparation

Cooking time is about 15 minutes.
While pasta is cooking, chop herbs finely.
Strain pasta and put in a serving dish and mix in tomatoes.
Pile all mixed herbs on top of pasta.
Heat olive oil until very hot (but not burning).
Pour over herbs (you can hear them sizzling).
Mix all together.
Cut cubes of Mozzarella cheese.
Arrange on top.
Don't forget the salt and pepper!
