Smoked Cheddar Muffins - cooking recipe

Ingredients
    1 c. all-purpose flour
    1 c. yellow cornmeal
    1/4 c. sugar
    1 Tbsp. baking powder
    1/4 tsp. salt
    1/4 to 1/2 tsp. ground red pepper
    2 eggs
    1 c. milk
    1/4 c. butter, melted
    1 c. shredded smoked Cheddar cheese
    Toppings: sunflower seeds, poppy seeds, pine nuts, or additional shredded smoked Cheddar cheese
Preparation
    In a medium mixing bowl stir together flour, cornmeal, sugar, baking powder, salt, and red pepper.
    In another bowl, beat together eggs, milk, and melted butter.
    Add to flour mixture. Add the 1 cup shredded cheese and stir just till batter is smooth (do not overbeat).
    Spoon batter into greased muffin cups, filling cups almost full.
    Top with desired toppings.
    Bake in a 425\u00b0 oven for 12 to 15 minutes or till golden brown.
    Let cool in pan for 5 minutes.
    Remove from muffin cups and serve warm.
    Makes 12 muffins.
