Manicotti - cooking recipe

Ingredients
    olive oil
    1 lb. veal, chopped
    16 oz. Ricotta cheese
    8 oz. Mozzarella cheese, chopped in 1/2-inch pieces
    2 eggs, lightly beaten
    1/4 c. parsley, chopped
    1/4 tsp. nutmeg (freshly ground)
    salt
    pepper (freshly ground)
    18 manicotti shells
    4 c. tomato paste
    5 oz. Parmesan cheese (freshly grated)
Preparation
    Put a very large pot of water on to boil in which to cook manicotti, adding several drops of olive oil.
