Fresh Sweet Potato Salad - cooking recipe

Ingredients
    1/2 c. sour cream
    1/2 c. mayo
    3 TBSP. honey
    2 TBSP. lemon juice
    1 tsp. grated lemon zest
    1/4 tsp. salt
    1/4 tsp. pepper
    2 lrg. sweet potatoes, peeled
    1 med. tart apple
    1 c. golden raisins
    1/2 c. pineapple tidbits, drained
    1/2 c. chopped pecans
Preparation
    For salad dressing: Mix sour cream, mayo, honey, lemon juice, lemon zest, salt and pepper in a small bowl.
    For the salad, shred the sweet potatoes to yield about 4 cups. Chop the apple to yield about 1 cup.
    Combine sweet potatoes, apple, raisins, pineapple and pecans in a large bowl and mix well.
    Add salad dressing to sweet potato mixture and mix well. Chill, covered, for 2 hours or longer.
    Spoon into a serving dish.
    Serve cold.
