Squash Relish - cooking recipe

Ingredients
    10 c. chopped squash
    4 c. chopped onions
    1/2 c. grated carrots
    2 Tbsp. canning salt
    5 c. sugar
    2 tsp. celery seed
    3 Tbsp. cornstarch
    1/2 tsp. dry mustard seed
    1/2 tsp. nutmeg
    1/2 tsp. turmeric
    2 1/2 c. white vinegar
    1/2 c. chopped pimentos
    3 c. red and green sweet peppers
Preparation
    Combine
    squash,
    onions and carrots.
    Sprinkle canning salt over
    mixture;
    let
    stand overnight.
    Drain and rinse in clear water.
    Add
    remaining ingredients.
    Bring to a boil and boil for 3 minutes.\tPack
    in hot jars and seal.
    Makes 7 to 8 pints.
